{"id":17516,"date":"2020-08-15T23:02:00","date_gmt":"2020-08-15T16:02:00","guid":{"rendered":"https:\/\/eddiesdeli.vn\/?p=17516"},"modified":"2024-07-31T14:57:38","modified_gmt":"2024-07-31T07:57:38","slug":"the-reuben-sandwich-at-eddies-diner-is-part-science-part-artistry-a-bit-of-magic","status":"publish","type":"post","link":"https:\/\/eddiesdiner.vn\/vi\/the-reuben-sandwich-at-eddies-diner-is-part-science-part-artistry-a-bit-of-magic\/","title":{"rendered":"The Reuben Sandwich At Eddie\u2019s Diner Is \u201cPart Science, Part Artistry &amp; A Bit Of Magic\u201d"},"content":{"rendered":"<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">As a follow up to my popular story recently on where to get your hands on the world\u2019s most-adored sandwich in Saigon \u2013 the Reuben \u2013 I\u2019ve decided to dedicate a post to each establishment that was featured.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">So I hit up Eddie\u2019s New York Deli &amp; Diner to get the lowdown on what makes a great Reuben sandwich.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">\u201cA great Reuben, like all great dishes, is all about using top quality ingredients and making sure it\u2019s all balanced,\u201d says Brad Segal of Eddie\u2019s, which is located in the Western expat borough of Thao Dien in Saigon\u2019s District 2.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Eddie\u2019s is probably the closest thing to 1950s and 1960s Americana as you can get in Saigon, perhaps even all of Vietnam, with its ground floor rocking the retro vibe of Rocko\u2019s Diner, the one that Pop\u2019s Chock\u2019Lit Shoppe was modelled on in the Netflix series Riverdale.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">For those of you not young enough, wind the clock back a bit to 90210\u2019s Peach Pit to get a bit of an idea of just how \u201cAmerican\u201d this place feels.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Eddie\u2019s may well hammer me for saying it, but I think you get the picture.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">\u201cAnd then, of course,\u201d continues Segal, \u201ca great deal of attention needs to be paid to how the sandwich\u2019s grilled. Again, you need the balance of crispiness without it being dry.\u201d<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Indeed, it wasn\u2019t until I started poking around for the story that I realised how important the Reuben has become for Americans and how iconic it is in the topography of their country\u2019s mighty culinary landscape.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">I can\u2019t begin to think of an equivalent in Australia \u2013 at least not a sandwich.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">We did invent the Pavlova though (named after a Russian ballerina who visited us on tour in the 1920s), a meringue-based dessert with a crispy crust (that cracks under as little pressure as some of the concrete sidewalks around here) encasing a fluffy inside that\u2019s heaped with whipped cream and topped with slices of fresh fruit.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">They were all the rage at dinner parties in the 80s.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">But it\u2019s hardly a match for the Reuben, is it?<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">This \u201cman-spread\u201d of a sandwich with its huge payload of corned beef brisket, sauerkraut, Swiss cheese and Russian dressing.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">At any rate, the Kiwis across the ditch claim they invented our Pavlova and in the meantime have robbed us of the dignity of being able to say outright that we actually have a national dish.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Unless, that is, we can somehow claim the Peach Melba, a dessert named after Australia\u2019s first internationally acclaimed opera singer of the late 1800s.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">But even that was invented in London.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">\u201cWhen we first started talking about opening Eddie\u2019s, we knew the hardest thing to get right would be the Reuben, as everything would need to be developed from scratch here in Saigon,\u201d says Segal, a Minnesotan who\u2019s been living in Asia for over 30 years. \u201cIt used to be really hard to find an authentic one here.\u201d<\/p>\n\n\n\n<figure class=\"wp-block-image aligncenter size-large\"><img fetchpriority=\"high\" decoding=\"async\" width=\"1024\" height=\"819\" src=\"https:\/\/eddiesdeli.vn\/wp-content\/uploads\/2024\/07\/bl12-1024x819.jpg\" alt=\"\" class=\"wp-image-17831\" srcset=\"https:\/\/eddiesdiner.vn\/wp-content\/uploads\/2024\/07\/bl12-1024x819.jpg 1024w, https:\/\/eddiesdiner.vn\/wp-content\/uploads\/2024\/07\/bl12-300x240.jpg 300w, https:\/\/eddiesdiner.vn\/wp-content\/uploads\/2024\/07\/bl12-768x614.jpg 768w, https:\/\/eddiesdiner.vn\/wp-content\/uploads\/2024\/07\/bl12-600x480.jpg 600w, https:\/\/eddiesdiner.vn\/wp-content\/uploads\/2024\/07\/bl12.jpg 1280w\" sizes=\"(max-width: 1024px) 100vw, 1024px\" \/><\/figure>\n\n\n\n<p class=\"wp-block-paragraph\">Well, clearly times have changed.
